But don't try that with oranges or pineapple- they can sit on your counter, but they won't get any sweeter than they already are. Keep in mind the concept of ripening is defined by the amount of sugar and other chemicals that add to the taste of the fruit. Strawberries and pineapples left out for several days will get softer, and may even change color, but that's not a sign of ripening. It's a sign of deterioration.
