David Rivillo is a professional pasta designer. Is that a profession? It is if you are as good at it as Rivillo is. <a href="https://www.instagram.com/david_rivillo/?hl=en" alt="Behold his Instagram page" class="on">Behold his Instagram page</a>, which is filled with wonders that are both tasty and seemingly impossible in their colorful forms. <a href="https://www.instagram.com/p/CWRh7gELlkD/">Here</a> for example, is a cannelloni dish that he made in collaboration with chef <a href="https://www.instagram.com/intermediatechef/">Jon Bennion</a>.

Looking through Rivillo's works, the question that I keep asking myself is "How is this even possible?" An only partial answer comes from the caption for <a href="https://www.instagram.com/p/CVa3w6CruUa/">this image</a>, which shows a raviolo that he made with a custom pasta mold produced by <a href="https://www.instagram.com/44_handmade_turkey/">@44_handmade_turkey</a>, an artisan who specializes in that craft. This raviolo is filled with ricotta cheese, Parmesan cheese, and walnuts.

Rivillo calls this "<a href="https://www.instagram.com/p/CVHExjRjiB7/" alt="coral spaghetti" class="on">coral spaghetti</a>". It initially reminded me of the deadly coral snake, but then I remembered the old rhyme, "Red and yellow, kill a fellow."
