David Rivillo is a professional pasta designer. Is that a profession? It is if you are as good at it as Rivillo is. Behold his Instagram page, which is filled with wonders that are both tasty and seemingly impossible in their colorful forms. Here for example, is a cannelloni dish that he made in collaboration with chef Jon Bennion.
Looking through Rivillo's works, the question that I keep asking myself is "How is this even possible?" An only partial answer comes from the caption for this image, which shows a raviolo that he made with a custom pasta mold produced by @44_handmade_turkey, an artisan who specializes in that craft. This raviolo is filled with ricotta cheese, Parmesan cheese, and walnuts.
Rivillo calls this "coral spaghetti". It initially reminded me of the deadly coral snake, but then I remembered the old rhyme, "Red and yellow, kill a fellow." We are safe.
