Chicken parmesan (or chicken parmigiana) is usually made with a breaded slice of baked chicken covered with the famous cheese from the Parma province of Italy.
Quality Italian, a fine Italian eatery just south of Central Park in New York City, takes this premise to the next level. As this video from Food Network illustrates, the chefs there make the crust for their chicken parmesan pizza with actual ground up chicken breasts. Freezing the disk makes it hard, so they can then bread it. Once it’s breaded, they drop it into the deep fryer until it’s a functional pizza crust.
